Because land is finite. We can't produce more land (even the Dutch are having problems retaining the land they've reclaimed). Supply and demand. But, that's capitalism for you.

Is a 2-story house not a way to increase the surface area? What about skyscrapers? We can produce more of those and so more living space.

We can... so long as planning rules allow it. For example, there is a height restriction in the Ashdown Forest area. There is also a height restriction in the South Downs National Park. Can you imagine the level of protests there would be from the environmentalists?

Oh, but what would the Tory landowners do? Are you suggesting that they give up their land for the common good? That's dangerously close to socialism, young man.

The Gulf of Mexico coast of the USA (colloquially, the Gulf Coast) is suffering from a combination of global climate change and damage caused by too many pipelines and drilling platforms disrupting the plant life that prevents erosion. As a result, Louisiana is losing literally 25-30 square miles per year of wetlands.

Can't build vertically on land that (a) doesn't have bedrock and (b) is eroding horizontally while you are trying to build.
